Program may vary on site and is at the discretion of the hotel staff*: Included Features and Excursions: History Talk (45 minutes): We\'ll find out more about the long fascinating history of Crete every second Wednesday evening. The island holds 5000 years of history, from the Minoan period to the Hellenistic times, to the Roman period, to the Byzantine era, up to modern times. Over the centuries Crete has been invaded by many countries mainly because of its strategic position in the then known world for the control of the eastern Mediterranean and the trade between 3 continents. This obviously had a tremendous impact on the islands traditions, way of life and character of the people. History walk of Chania- The little Venice of Crete-SPECIAL STI INCLUSION: We\'ll walk through the old Venetian town of Chania with our host on Wednesday. Discover the greatest monument of the western Crete. Lunch at Petridis taverna on the water front. Nikos, the owner has been a restaurateur for 65 years! But more importantly, we ate the most delicious calamari, shrimp saganaki and so much more for 3 leisurely hours. Of course, wine was included and raki to top it all off! Greek Night-SPECIAL STI INCLUSION: Eat, Drink and be merry at Barbeque and Greek night with Live Greek music and professional dancers every Friday evening. We\'ll get to see the traditional costumes and dances of Crete and mainland Greece. Join Vassilis, the Mistral staff and the dancers for a special night. (Minimum of 15 required) Cooking Demonstration: Join us in the kitchen on Friday afternoon. We\'ll see, smell and taste what will be served for dinner. Learn how to make stuffed tomatoes, tzatziki and Cretan small cheese pies. Take home recipes to impress your friends at home and our host will send you home with a bottle of the family olive oil. Group Photo Session: Say (Feta) cheese! On Friday night we\'ll enjoy a group photo session to remind us all of an excellent week. Vegetable Garden: We\'ll visit the hotel\'s vegetable garden (organic in transition). We\'ll see for ourselves where the vegetables, eggs and chicken we enjoy at the hotel come from. Snorkeling: Let\'s go snorkeling! Located across from the hotel (wet suits and gear provided). Bird Watching: We\'ll watch some of Crete\'s wild birds, many of them rare. (Telescope provided) Optional Excursions (at your own expense, ranging from $30 to $60 US per trip): # Wine tasting: We\'ll enjoy wine and appetizer. Sip on the best Cretan and Greek wines. Did it, amazing! # Fishing: Join Adonis (host) on a fishing expedition on the beautiful Mediterranean Sea. # Scuba diving in Chania at the 5 Star P.A.D.I. Center. For experienced or beginner divers. # Horseback riding (only half an hour away from the hotel). # Samaria Gorge walk, the biggest gorge in Europe! This is a real challenge and a must for hikers (walking boots/shoes recommended). # Discover beautiful Elafonissi Island, the blue lagoon of Crete. # Visit the Palace of Knossos and the lost world of the Minoans. # Bicycling in Crete (Itineraries vary). # Visit Milia a restored village. Experience the real spirit of Crete! # Visit Falasarna and Sfinari, the best beach on the island exclusively for our guests on Thursday. We\'ll enjoy turquoise waters, soft pink sand and breathtaking views. There is also a long fresh seafood lunch at a hidden beach Taverna. We recently met our fisherman, a single, 30s something, who actually spear fishes by hand diving up to 75 meters, 100 times a day!
